
Pork tenderloin is the leanest cut of the animal, and with the clue in the name is beautifully tender, also referred to as the fillet. The tenderloin is a quick cook and can be fast roasted or cut into small steaks to form melt in your mouth kebabs or stuffed and rolled to make a roulade. Be sure not to overcook being so lean it will soon become dry.
